Zucchini Pie
Ingredients:
- 12 large eggs
- 1/2 teas. marjoram
- 1/2 cup grated romano cheese
- 1/2 cup olive oil
- 1 cup bisquick
- 1 teas. salt
- pepper to taste
- parsley flakes
Spray baking pan 9X13 with Pam. Scrub 3 large or 6 small zucchinis with veggie brush, slice in thin slices. Beat eggs and add marjoram, cheese, oil, bisquick, salt, pepper, parsley flakes. Pour egg mixture into baking pan and drop zucchini slices into egg mixture. Bake at 350 degrees for 40 minutes. This can be cut into squares for serving.
